What Are Choux Puffs?

Choux puffs, also known as cream puffs, are French pastries made from choux pastry, or pâte à choux. Unlike most pastries that rely on baking power and yeast to rise, choux pastry uses the steam created during baking to form a hollow shell.

This baking process creates a crisp exterior and an empty middle, making it perfect for all types of fillings. Traditionally, choux puffs are filled with vanilla pastry cream. Today, however, bakers have embraced a wide variety of flavours.

At The Pine Garden, we’ve put on our own spin on this French classic with six different fillings:

The classic choux puff recipe is relatively simple. All you need is water, milk, butter, all-purpose flour, eggs, a pinch of salt, and a little sugar. Once the dough is cooked on the stovetop, it’s piped onto a baking tray with a piping bag and piping tip.

It is brushed with an egg wash, and baked at the right baking temperature until golden brown. After baking, the shells are left to cool on a cooling rack before they’re filled.

The contrast between a choux puff’s crispy shell and creamy filling is why it’s loved by so many. It creates a texture that’s both satisfying and indulgent without feeling too heavy. The airy pastry shell also balances the rich filling to make each bite light and enjoyable.

Another reason for their popularity is their versatility. While classic flavours like chocolate and vanilla are timeless, modern bakeries have introduced many creative fillings over time. Their bite-sized nature also makes them easy to eat.

You can easily enjoy one as a treat or bring a box to share with family and friends. If you can’t finish them, choux puffs can be stored and enjoyed chilled straight from the fridge or left at room temperature.

With that said, choux puffs are best eaten fresh when the shell is still crisp and the filling is creamy.

The History of Choux Puffs

Although choux puffs are closely associated with French cuisine today, their origins date back to the 16th century. Choux pastry is believed to have been introduced to France by Italian chef Pantanelli, who accompanied Catherine de’ Medici when she married King Henry II of France.

Over the years, French pastry chefs refined the recipe into what is now known as pâte à choux. The dough became the foundation for many classic French desserts. These include éclairs, profiteroles, croquembouche, and of course, the choux puff.

Today, choux puffs have become a favourite dessert around the world. While the traditional version is filled with vanilla pastry cream, many bakeries have created their own unique fillings inspired by different flavours.
